ooh so pretty niki :) I wish I were nearby and could visit for a keylime cupcake! You'll have to share the recipe with us! I love keylime and could definately use a cupcake right now.

i want to do such cool cupcakes once.. all i can do is boring blueberry muffins without any icing on top..

can you post the recipe please? they look delightfully yummy, or should I say om nom nomlicious :P

Oh the recipe was nothing fancy:
1. Duncan Hines Coconut Cake Mix, make as directed on the box, plus add the juice of 5 or 6 key limes
2. I used regular pre-made frosting (Plain White), however I would suggest a homemade cream cheese frosting instead. That's what I'm going to use next time.
I also added juice from about 10 key limes to the frosting....but it made it a bit too runny. But after they sat out for an hour the frosting firmed up.
Let cupcakes cool, cover with frosting, sprinkle with green sugar & top with fresh coconut. add a slice of key lime to the top, just to make it a tad bit cuter :)
This was a spur of the moment cupcake session.
I have an awesome recipe that I'm dying to make soon.
I'll share that with y'all next time :D

I will say that I took these to work & no one died or threw up or anything after eating one, in fact they all gushed at how tasty they were....so they must have been ok ;)
